It's around this time of year that I always find myself with more courgettes than I know what to do with - at the moment there are two in my fridge and more growing on the plants in my vegetable patch. So, I thought it would be a good idea to share some of my favourite recipes so none go to waste.

Courgette, Cheese and Bacon Muffins |
These muffins are made with buttermilk and are a delicious & filling savoury snack perfect for that 3pm slump. There are plenty similar recipes online but the one I use has 80g of butter, 1 egg, 90g of bacon, 60g of grated cheddar, 120g of grated courgette, 300g of self raising flour and some chopped chives.
They are really quick to make too. Once you've fried off your bacon all you have to do is mix all the ingredients together and bake for 20 minutes at 180°c.
I found this recipe online while searching for healthy lunch prep and added it straight to my list because not only does it tick the box for being healthy but it also sounded really filling which is a most for me. It's only a bonus that it uses up my abundance of courgettes. I've linked the Tasty recipe above which makes four portions.

Courgette and Feta Pizza |
I used shop bought dough to make this pizza for a quick and easy lunch and it was delicious! Topped with grilled courgettes, feta, small mozzarella balls, olive oil and oregano. It's a delicious fresh alternative to pizzas with a tomato base and meat heavy topping.
I am saving the best until last here because I love this Orzo dish - leeks make anything creamy and the feta and courgette make it feel really summery. I've lost count of the amount of times I've made this to enjoy in the garden on a sunny evening.
