There is no doubt this will be a strange Christmas and I've been thinking about small gifts for loved ones or neighbours who have looked out for you this year. I wanted to combine my love of baking with gift giving and created this speculaas biscuit recipe kit. It can easily be left on someones door step and give them an activity to fill the days that would normally be spent together.
You will need:
100g of plain flour
1 tsp of cinnamon
1/2 tsp of ground ginger
1/2 tsp of nutmeg
1/2 tsp of baking powder
1/4 tsp salt
50g of soft brown muscovado sugar
2 tbsp candied peel, finely chopped

I found a nice quality jar, which can be kept afterwards, and filled it with all the dried ingredients. I topped it with the candied peel just for the visual look but it can easily be mixed in too.
Also include a tag on the jar explaining what is required to make the cookies and the fresh ingredients you need. I couldn't find any plain tags so I found a template online and printed onto a sheet of card but they can easily be hand written. I've written out what I included below.
Just add:
2 tbsp whole milk
75g of butter
Preheat the oven to 180C/Gas 4.
In a bowl, mix together all the ingredients until well combined. Using your hands, bring the mixture together as a dough.
Roll the dough out on a lightly floured work surface and using a cookie cutter, cut out festive shapes. Transfer the biscuits to the oven and bake for 15-18 minutes.

I've been out and bought some individual festive cutters (which you can pick up cheaply) and included that and some festive ribbon to finish off the jar as the perfect little gift.
