I love baking and this is one of the easiest recipes i have. Takes just a few minutes to prepare but tastes amazing and because it contains fruit you can pretend it's healthy too. one thing i would recommend tho is to mix in the bicarbonate of soda very very well because i have once of twice got mouthful of it in the cake and it tastes horrible!! Sorry for the poor photos too. The lighting was awful and my photography skills aren't quite up to scratch here!
- 4 ripe bananas
- 150g melted butter
- 2 eggs
- 175g plain flour
- 2 tsp baking powder
- 1 tsp bicarbonate of soda
- Pinch of salt
- 1 tsp vanilla
Mash up the bananas in a large bowl, then mix in the butter and eggs. add the rest of the ingredients and mix well. Pour the mixture into the baking tin (lined with butter) and place in a preheated oven (180℃) for around 45 minutes. the cake will be ready when a skewer stuck into the middle comes out clean.
