5 Simple Student Meal Ideas #2

As my last post went down so well I'm back with another 5 simple student meal ideas. Since September I've really started to enjoy cooking and making new things. The beauty of most of the dishes I cook is that they serve more than one person so the left overs go in the freezer for a day I'm feeling lazier or have lots of work to do. 


Macaroni... One of my favourite teas and so simple to make (although a lot of cleaning up). I usually have it every couple of weeks especially if I want some comfort food. You just make a simple white sauce melting 12.5g of butter and adding 12.5g of flour to the pan. Cook the rue for a couple of minutes beating all the time so it doesn't burn. Then whisk in 1/2 a pint of milk and keep whisking until the sauce thickens (and milk boils) then add as much cheese as you want. I like to bake mine in the oven for 10 minutes with some cheese on top to finish it off.  


Fish & Potato Wedges... Something I always have in the freezer is battered fish. For nights when you REALLY can't be bothered it is great to just stick in the oven. This time I roasted some carrots and potatoes with it but I often have chips too. A useful meal for getting some of your 5 a day because just about any vegetable can be added.


Cottage Pie... I only started to make it recently but it reminds me of being a kid and I love it. Basically all I do is brown the mince and onions then add the seasoning from a packet (Colmans is good). I also like to add carrots because they are one of my favourite vegetables. While all this is going on peal and boil some potatoes for mash and your done. I cook mine in the oven for about 15/20 minutes.


Chicken Curry... This one is a rogan josh but you can use whatever one you like best (whether it is more spicy or less). To bulk the chicken out, because lets face it it's expensive, I also added an onion and pepper. It is delicious and the highlight of last week when I realised I still had some in the freezer.


Meatballs & Spaghetti... Saving the best for last here! You might see me going on about it on twitter but this is my favourite tea. I love it when my mum makes the Jamie Oliver recipe but while I'm away at uni I buy the pre-made ones from Morrisons (they are my favourite) and add a simple tomato sauce either from a jar or made simply with a tin of tomatoes and some seasoning.

Next week I'm going to have to do some more batch cooking for the freezer because I'm fast running out of meal ideas. What is your favourite mid-week meal? I'd love to know so leave me a comment.

  1. Yum! I definitely wish I did more batch cooking, would be so good to have meals on hand for when I'm tired after work! I've been cooking a lot of mexican and salads recently, so good! x
