You will need:
500g cooked beetroot (not pickled)
3 small potatoes
1 red onion
1 tbsp olive oil
1 clove garlic (crushed)
500ml beef (or any type you want)2 bay leaves

Firstly peel potatoes and cut them into quarters. Peel and chop the onion- this doesn't have to be done too well because it will be blended. Soften the onion in the oil for 5 minutes, then add the garlic and cook for 1 minute.
Add the potatoes and stock. Cover and simmer for 15 minutes, until the potatoes are cooked. Put the beetroot in a blender until smooth. Once the potatoes are cooked add the soup to the blender.
Blend until smooth and return to the pot. I then added two bay leaves and left it to cook until needed or put it in the freezer. Add more stock if you want a thinner soup. Ladle into bowls and that's you done. Doesn't the colour just look delicious?

I'm not quite sure I would fall in love with beetroot soup, but the end result does look very pretty. :)
