We’ve always called this a windfall cake in
our family because it is supposed to be made with apples too but because I has
double to amount of berries needed I ended up just making it with black
berries. It feels like I made this weeks ago (it might have been now I think
about it) so the black berries might be gone from the bushes now but I’m sure
you’ll still be able to get them in the shops. This cake always turns out
delicious and moist not to mention the great purple colour (my favourite if you
didn’t already know).
Ingredients:
175g of plain flour
100g of butter
75g of caster sugar
225g of black berries (I used 450g and no
apples but it’s up to you)
350g of apples (pealed, cored and grated)
3 eggs (not pictures… oops)
I know I’m always saying this but it is
another very simple recipe. All you have to do is rub together the butter and
flour until it resembles breadcrumbs and mix in the sugar.
I then beat the eggs in a bowl before mixing
them into the dough after mixing in the berries.
I then greased a cake tin with butter. I used a 20cm tin with a loose bottom.
Spoon the mixture into the tin and bake for 45
minutes at 180° C. That it all
you need to do is dust the cake with sugar when it comes out of the oven and is
still warm.
